Stuffed Mini Bell Pepper/Capsicum


Ingredients:
Mini bell peppers -10
Onion, chopped - 1, med
Tomato - 2, med
Green chilies - 4
Mustard seeds - 1tsp
Cumin seeds - 1tsp
Kala jeera - 1tsp
Salt

For stuffing:
Corriander powder - 1tsp
Red chill powder -1tsp
Besan - 1tbs
Jeera powder - 1/2 tsp
Turmeric powder -1/2 tsp
Garam masala - 1/2 tsp
Amchur powder - 1tsp
Salt

How I made this:
1.Wash, drain and make slits vertically and horizontally on bell peppers
2.Mix all the ingredients that are listed below for stuffing and keep it aside.
3.Now, stuff this masala onto bell peppers
4.In a wok, add little oil, once its hot add mustard, cumin and kala jeera seeds.
5.Now add half of the chopped onions and fry till golden brown.
6.Add chopped tomato, and let it cook in thick gravy consistency
7.Add stuffed bell peppers and saute for couple of minutes.
8.When its almost done, add chopped onions, they will add some crunchiness to the gravy
9.Tastes good with roti!

Bread Bonda



Ingredients:
Bread - 1 loaf
Aloo/ Potato - 3, big
Onion - 1, Medium
Green chillies - 5 or 6
Red chili powder - 1/2 tsp
Lemon juice - 1 tsp
Chaat masala - 1 tsp
Green peas - 2 tbs, boiled
Coriander - 1/2 cup, Chopped
Cooking oil
Salt

How I made this:
1.Chop the ends of bread slices and keep it aside.
2.Boils potatoes, peel and mash them.
3.In a bowl, add mashed potatoes, Chopped onion, Green chillies, Red chili powder, Chaat masala,green peas and mix well.
4.To this add coriander and salt. Adjust the spice level.
5..Make balls of lemon size of this mixture and set it aside
6.In a wok/Kadai add 6 tbs of oil and let it become hot on medium high
7..Add water to at large shallow bowl.
8.Stack 2 bread slices on each other, dip in the water, place in between the palm and squeeze out the water gently without spoiling the shape.
9.Add the mixture balls and close the ends into an oval shape.
10.Deep fry in the oil

Serve with: Ketchup

Egg Burji (with Egg Whites)


Egg whites is an addition to our new healthy eating regime.For some reason I dislike eating scrambled egg whites for breakfast. Though, I know that it is high in protein and very low in Carbs I cannot trick myself into eating it and on other hand my husband loves it. So, I had to find an alternate(tastier) way to include in my menu and that's how I ended up making Burji with egg whites.

  Ingredients:
  Egg whites ( Canned) - 2 cups
  Eggs - 1 
  Onion, chopped - 1
 Green chillies - 6
 Curry leaves - 1 stem
 Corriander - 1 stem
 Urad dal - 1 tsp
 Chana dal - 1 tsp
 Mustard seeds - 1 tsp
 Chaat masala - 1 tsp
 Garam masala - 1/2 tsp
 Cooking oil 
 Salt

 How I made this: 
 1.Take 2 cups of egg whites in a bowl, add 2 eggs and beat well. 
 2.In a pan, add little oil,  mustard seeds, chana dal, urad dal and let it splutter.
 3.Add curry leaves, chopped onions, green chillies and saute for 10 minutes.
 4.To this, add chaat masala, garam masala and salt and fry for 5 more minutes.
 5.Add beaten eggs, and keep stirring it. 
 6.Chop corriander and egg to it and cook for another couple of minutes
 7.It tastes good with roti as well as rice


Palak paneer


Spinach in itself has a wonderful  flavor and so does Paneer and the combination is unbelievably good. The best way to eat greens. Spinach is rich in iron and calcium content and Paneer is a good  source of protein.

Ingredients:
Spinach/ Palak - 1 bunch
Paneer - 200 gms
Tomato - 1,small
Onion - 1,small
Green chillies - 6
Cloves - 2
Cinnamon - 1/2 inch stick
Kala jeera - 1/2 tsp
Red chill powder - 1/2 tsp
Corriander/Daniya pwd - 1tsp
Garam masala/Pav baaji masala - 1tsp
Cooking oil
Salt

How I made this:
1.In a large vessel, add lots of water and chopped spinach, tomato and boil it for 10-15 mins.
2.Once the spinach shrinks into half and cooks properly switch off the stove, drain water and let it cool.
3.Put spinach in blender and make into puree.
4.In a pan, add some oil once its hot, add kala jeera and onions, cloves, cinnamon and saute for 5 mins.
5.Now, add green chillies, daniya powder, chili powder  and saute for couple of minutes.
6.Add palak puree to this, and let it cook for 5 more mins.
7.Now add, garam masala or pav bajji masala and salt to it.
8.Add chopped paneer pieces and cover it up.
9.Let it cook for another 10 mins and it will be done

  • Kala jeera will give a unique flavor to this, while Pav bajji masala will give a twist in flavor

Serve with: Roti/ Chapati/ Naan

    Mung dal tadka


    I seem to be on run with healthy options, an addition to the list. And I cannot compromise on taste, so added some spices and made this tastier.
    Ingredients:
    Mung dal/Pesaru pappu whole  1cup(Sprouts or Regular)
    Onion, Small   1
    Tomato           1
    Green chillies   5
    Curry leaves    1 stem
    Mustard seeds1 tsp
    Cumin seeds 1tsp
    Garam masala  1 tsp
    Corriander 1 stem
    Salt 


    How I made this:
    1.Soak mung dal overnight(Regular) or use mung sprouts
    2.In little oil add cumin seeds, mustard seeds, curry leaves and let it splutter
    3.Add chopped onions, green chillies, saute' for few minutes
    4.Now add tomato, garam masala, corriander and salt and fry for couple of minutes
    5.Add mung dal and cook it for couple of minutes 
    6.This tastes yum with roti

    How to sprout Moong/Mung dal beans

    We always believed  in healthy eating and knew that it is not very easy to switch to. Its a lifestyle change, a huge one. As our love for Junk food, Masala food and Deep fried food has strongly rooted in our taste buds for ages it becomes quite a challenge. But, incorporating healthy options more often lets me indulgence in guilt food more peacefully
    The best bet is sprouts, it taste yum and can be taken as snack or a meal.



    How to sprout moong dal beans: 
     Ingredients:
    Moong dal  1 cup
    Water      

    Method:
    1.In a large bowl, wash moong dal beans and add 4-5 cups of water
    2.Leave it overnight or 6-8 hours.
    3..Drain the water, leave little water and cover it up with a lid and keep it in a warm place for about 7-8 hours.
    4.It should be ready, if not leave it for couple of hours.




          Why sprouting?
    • Increases in essential fatty acids
    • Increases in vitamin content
    • Increase in fiber content
    • It increases quality protein

      Gutti Vankayi (Stuffed Eggplant )




      Gutti vankayi is a signature Andhra dish! Regarded as one of the most popular south Indian dishes. It has a lot of versions depending on the regions. This is how it is made at my place..
      Ingredients:
      Brinjal - 8
      Onions - 1
      Groundnuts - 50 gms
      Ginger - small piece
      Daniya powder - 2 teaspoon
      Cloves - 5
      Red chillies - 5
      Coriander - 4 stem
      Salt

      How I made this:
      1. In a pan, add little oil and add chopped onions, ginger, daniya powder, groundnuts cloves, red chillies, salt and fry them.
      2. Now switch off the stove and let it cool.
      3. Add the above to a blender and make it into paste.
      4. Cut or rather slit Brinjal, vertically and horizontally and stuff the above paste.
      5. Take a wok, add oil and fry the stuffed brinjal for about 10mins.
      6.Now, simmer the heat and cover the pan with a lid for couple of mins, this lets it cook inside out.
      7.Remove the lid, and saute until its completely cooked
      8.After it is completely cooked, sprinkle chopped coriander and serve hot!

      Serve with: Roti or rice.
