Chocolate cookies..


Ingredients:
All purpose flour - 2 cups
Butter - 1 ounce stick
Egg -1
Baking powder - 1tsp
Sugar - 1 cup
Salt - a pinch
Nutrella chocolate spread - 4 tsp
Vanilla essence - 1 tsp

Method:
1.In a large bowl, whisk eggs and to this add butter, sugar, baking powder, vanilla essence and mix well.
2.Add flour, salt and mix  to a batter of medium consistency.
3.To this mixture add chocolate spread and mix well.
4. Pre-heat oven to 325 C, grease baking tray  and with a spoon drop batter 2 inches apart.
5.Reduce the oven heat to 200 C, bake the cookies for 20-25 minutes.

Semiya Upma recipe

Semiya upma use to be our childhood Sunday special breakfast!!
Ingredients:
Vermicelli - 200 gms
Onion - 1 small
Green chillies - 4
Green peas - 1/4 cup
Carrot chopped - 1/4 cup
Beans - 1/4 cup
Oil
Salt to taste

For tempering:
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Urid Dal - 1 tsp
Chana Dal - 1 tsp
Curry leaf - 1 bunch


Procedure:
1.In a pan, on medium heat fry vermicelli without adding oil until golden brown. Keep it aside
2.In a wok, add oil once its hot enough, add mustard seeds, cumin seeds, curry leaves and let it pop.
3.Now add, urid dal and chana dal roast it to golden brown
4.To this, add onion and green chillies, sauté for 2-3 minutes
5.Add all chopped vegetable and fry them well for about 5-10 minutes
6.Then add 2 cups of water and let it boil.
7.Once you see bubbles, add vermicelli and stir it.
8.It will cook in 10 mins, keep stirring in between. When the water is absorbed and its completely cooked, it is ready to serve.

Idli recipe

Ingredients:
Urid Dal - 1 Cup
Idli Rava - 2 Cup
Baking Soda - 1/2 tsp
Salt to taste

For the batter:
1.Soak urid dal and idli rava overnight or for 7-8 hours seperately
2.Grind urid dal in the morning, squeeze out water from soaked idli rava and mix with urid dal batter.
3.Add baking soda to this mixture and let it ferment for about 5-6 hours.
4.When you see that batter rises, it is ready.

Making Idlis:
1. In Idli pan: Take the idli moulds, grease it with oil. Pour the batter into the moulds.
 2. Put the idli stand in a cooker, do not put the regulator. It has to steam cook.
 3. Let it cook for about about 10-15 minutes. Switch off the stove. Remove the cover after a minute and serve hot with chutney and sambhar!

Pesarattu/ Moong Dal Dosa recipe

Ingredients:
Moong dal/ Green gram - 2 cups
Green chillies - 6-8
Ginger - Small piece( Lemon size)
Onions - 1 med, chopped.
Corinader - Half bunch
Oil
Salt to taste

For the batter: 
1. Wash and soak the moong dal in water overnight ( 6-7 hours)
2. Grind the moong dal along with 3 green chilies, ginger ( 2 inch) and salt into paste. The consistency should be medium like idli batter

Making pesarattu:  
1.Take a pan, when it is hot, pour a tbs of batter and spread evenly in clock wise and anti-clockwise direction.
2.Add little oil along the edge
3.Sprinkle chopped onions, ginger pieces, chillies, coriander. Let it cook for a minute. Then flip the dosa.
4. Let it cook on another side, fold it and remove
5.Serve hot with chutney or upma.

Note:
1.Soak moong dal  in a large bowl with extra space, since the dal expands.
2. Oil the pan, before making  the first pesarttu, so that it won't stick to the pan.
